Fried rice is a classic take-out dish because it is quick, easy, filling and delicious. It is also affordable, which I need from a home-cooked meal. Vegetable fried rice is a great way to make leftovers from my fridge. It’s also quick and easy to prepare. I can add meat or seafood to my vegetable fried rice if I feel the need.
WHAT IS FRIED RICE?
Fried rice is a Chinese recipe that uses cooked rice. The rice is stir-fried in a wok and other ingredients like meat, seafood, eggs and vegetables. Finally, the rice is finished with savoury seasoning. This dish is very flexible and affordable, so it’s so popular! This American version uses a skillet to cook the ingredients. It can be found in most American grocery stores. LEFTOVER RICE IS BEST FOR THE BEST RESULTS
Rice that has been cooked previously and cooled completely, preferably overnight, will prevent clumpy or gummy-fried rice. Stir-frying rice that is slightly dry and less starchy is best because it can absorb the moisture from the sauces and vegetables without becoming too sticky. You can cook leftover rice the night before and then spread it on a baking tray or large baking dish to speed cooling. Once cool, refrigerate the rice until you are ready to use in your stir-fry.

Do I need a wok?
Because of their large surface area, woks work well for stir-frying because you can add many ingredients without worrying about crowding. Although a frying pan is not as efficient, you can still make up for the crowding problem by cooking each ingredient separately and then adding them together.
WHAT ELSE CAN YOU ADD TO VEGETABLE SIR FRY?
This is my favourite part. You can add ingredients to a simple Vegetable Story, including more vegetables, meat, seafood, or even crunchy toppings. These are some fun additions to your stir-fry:
- Other vegetables include beansprouts and mushrooms, green beans, broccoli, red chillies, or kimchi.
- Meat and seafood such as chicken, beef, shrimp or pork.
- Other sauces include oyster sauce, chilli crisp, and sriracha.
- Crunchy toppings like peanuts, cashews and sesame seeds or crushed ramen noodles

INGREDIENTS
- 2 cloves minced garlic ($0.16)
- 1 tsp grated fresh ginger ($0.10)
- 1 carrot, chopped ($0.16)
- One red bell pepper, chopped ($1.50).
- Four sliced green onions ($0.40).
- 2 large eggs ($0.46)
- 1 cup frozen peas (0.50)
- Three tablespoons of cooking oil, divided ($0.12).
- 3 cups of cooked and cooled rice ($0.62)
- 3 Tbsp soy sauce ($0.18)
- 1 Tbsp toasted sesame oil ($0.30)
INSTRUCTIONS
- Preparing the vegetables ahead of time will make them ready for use when they are needed. Mince the garlic and grated ginger. Slice the bell pepper and carrot, and cut the green onions. Measure the frozen peas.
- In a small bowl, whisk the eggs lightly. Place the eggs in a large skillet on medium heat. Heat 2 Tbsp cooking oil in a large skillet. Stir to coat the surface. Mix the eggs in a bowl and stir until well combined. Transfer the eggs to a bowl or plate.
- The skillet should still have some oil. The heat should be turned up to medium-high. Stir in the chopped carrots. Cook for approximately two minutes. The bell pepper and the white ends of the green onion should be added next. Stir for one more minute. Add the frozen peas, stir, and heat through. Place the vegetables in a bowl or on a plate.
- Add the remaining 1 Tbsp of cooking oil to the skillet. Stir to coat the surface. Add the ginger, garlic, and cooked and cooled white rice to a large skillet. Stir the rice and continue to cook for 2 minutes or until it is cooked through.
- Spread the soy sauce, toasted sesame oil and rice. Mix the sauce and rice until well combined. Turn off the heat.
- Stir the eggs, vegetables and rice together in a skillet. Let the heat from the skillet heat through. Add the green ends of the sliced green onion to the top. Adjust the sesame or soy sauce to your taste.
