Chop the garlic and chilies finely. Add sugar, water, and vinegar to a small pan. Add finely chopped garlic, too. It was stirred to dissolve the sugar and brought to a rapid boil on high heat for 12 minutes.
Mix Cornflour and cold water.
Stir well, lower the heat, and add the cornflour mixture and water to the chilies. Simmer for 3 minutes.
Let the mixture cool down for a few minutes, then pour your Sweet Chilli Sauce into a sterilized bottle or jar.

Sterilize the jars you plan to use for pickles and preserves before you begin. It is easy to do.
Glass jars should have an airtight metal lid. They must be washed in hot soapy, then rinsed with water.
Preheat the oven to 270 degrees F (130 degrees C) and let the jars sit for 15 minutes.
Is this hot sauce?
This sauce is relatively mild. Cayenne chilies are usually benign but can vary. The balance between sweet and spicy should be good.
How can I make the temperature hotter?
You can make a spicy sauce by replacing some of the chilies in your recipe with hot varieties, like Thai red chilies.
What other vinegar can I use?
You can use white wine vinegar. Use distilled white wine vinegar instead; it’s too strong.

As a precaution, you can wear disposable gloves when cutting the long red chilies.
Slice the chilies in half, lengthways. Remove the stems. Use a food processor or a small hand-held chopper to chop them finely. Do not reduce them into a paste.
Place the sugar in a small pan with 1 cup of water, rice vinegar, garlic finely chopped, and chilies. Stirring to dissolve the sugar over medium heat, bring the mixture to a rapid boil. Then simmer on medium-high heat for 12 mins.
Mix the Cornflour and the cold water. Reduce the heat, and stir the cornflour-water mixture again. Cornflour can settle when prepared in advance.
Stir well the Cornflour into the water and add the chilies. Simmer for 3 minutes.
Let the mixture cool down for a few moments before bottling. This will help to distribute the chilies evenly throughout the variety.
Pour the liquid into a jar or bottle that has been sterilized.
Store in the fridge for up to 3 months.
Remove a portion from the jar before using it, and let it come to room temperature. Stir well before serving.
Notes
It is essential to use filtered/un-chlorinated water when pickling or preserving. You don’t want to have the bad taste from the water affect the final product!
You could also use white wine vinegar. Use distilled vinegar instead, as it’s too strong.
Cayenne/chili is another name for the long Red chili. After trimming the stalk, the chili weighed 115 grams (4 ounces).
Use one tablespoon of Cornflour for a thinner sauce. Or use 1 1/2 tablespoons Cornflour for a thicker, more pourable sauce.
The teaspoon in Australia is 20 ml or four teaspoons. In many countries, a tablespoon equals 15 ml (3 teaspoons). If necessary, please adjust your measurement.
Preheat your oven to 130 degrees C (270 degrees F) to sterilize a jar. After 20 minutes in the oven, remove the clean pot and fill it with Sweet Chilli Sauce.
